Seven Sheet Pan Dinners, One Pan to Wash

Seven Sheet Pan Dinners, One Pan to Wash

Quick answer: Run the oven at 425°F, line a rimmed half-sheet pan with parchment, and stagger the ingredients by cook time. Sunday prep takes about 75 minutes. After that, every dinner is 10 minutes of work and one pan to rinse.

The plan below feeds four at dinner with one extra portion for your lunch the next day. Cooking for fewer? Cut the meat and veg by a third. Cooking for teenage boys? Buy more.

Why sheet pan dinners go wrong

Most dads who give up on sheet pan cooking made the same mistake. They piled everything on the pan, and it steamed. Soggy potatoes, gray chicken, and a pan that still needs scrubbing.

Fix it with three habits:

  • Give it room. Food should sit in a single layer with space between pieces. If it doesn't fit, use two pans. It's still less cleanup than a stovetop dinner.
  • Dry the vegetables before you oil them. Water is what makes steam.
  • Stagger. Dense stuff like potatoes and carrots goes in first. Broccoli, green beans and zucchini go in partway through.

Use parchment, not bare metal. Cleanup becomes crumpling something up and throwing it away.

Buy a meat thermometer if you don't own one. It's about the best fifteen dollars you'll spend in the kitchen. Chicken and ground turkey need to reach 165°F. Pork chops need 145°F plus a three-minute rest. Salmon needs 145°F. Those are USDA numbers, and they beat guessing.

The week, day by day

All dinners bake at 425°F. Lunch is the previous night's leftovers unless noted.

Monday

  • Breakfast: egg bake square, banana
  • Lunch: turkey sandwich on whole wheat, apple, baby carrots
  • Dinner: Dijon sausage and potatoes. Halve 2 lb baby potatoes and cut an onion into wedges. Roast 15 minutes. Add sliced smoked chicken sausage and 1 lb green beans, then roast 15 to 18 more. Toss with a spoonful of Dijon and a drizzle of oil on the hot pan.
  • Snack: apple with peanut butter

Tuesday

  • Breakfast: egg bake square, berries
  • Lunch: leftover sausage and potatoes
  • Dinner: chili-lime chicken thighs. Rub 8 bone-in, skin-on thighs with chili powder, garlic powder, salt and lime zest. Roast on the pan with 3/4-inch sweet potato cubes. After 20 minutes, add broccoli. Total time runs 35 to 40 minutes, until the thighs hit at least 165°F. Squeeze lime over it all.
  • Snack: Greek yogurt with berries

Wednesday

  • Breakfast: egg bake square, banana
  • Lunch: leftover chicken thighs and sweet potato
  • Dinner: turkey-oat meatballs. Mix 1.5 lb ground turkey, 1/2 cup rolled oats, 1 egg, 2 minced garlic cloves, Italian seasoning and salt. Roll into 16 to 18 golf-ball-size meatballs. Surround with zucchini half-moons and pepper strips. Roast 18 to 22 minutes. Serve over microwave brown rice with warmed marinara.
  • Snack: string cheese and whole grain crackers

Thursday

  • Breakfast: oatmeal with sliced banana and a spoonful of peanut butter
  • Lunch: leftover meatballs over rice
  • Dinner: smoked paprika pork chops with apples and carrots. Start 1.5 lb carrot chunks and onion for 10 minutes. Add four 1-inch boneless chops rubbed with smoked paprika, salt and pepper, plus apple wedges. Roast another 20 to 25 minutes until the pork reads 145°F. Rest 3 minutes.
  • Snack: hummus with cucumber and baby carrots

Friday

  • Breakfast: oatmeal with berries
  • Lunch: leftover pork and apples
  • Dinner: fajita pan. Toss 2 lb chicken breast strips, 3 sliced peppers and a sliced onion with chili powder, cumin, smoked paprika and oil. Roast 18 to 20 minutes. Wrap tortillas in foil and set them on the lower rack for the last 8 minutes.
  • Snack: popcorn

Saturday

  • Breakfast: scrambled eggs and toast
  • Lunch: leftover fajita bowl, no tortilla needed
  • Dinner: lemon-garlic salmon. Roast broccoli alone for 8 minutes. Push it aside, add four salmon fillets brushed with oil, lemon and garlic, and roast 12 to 15 minutes. Serve with microwave rice.
  • Snack: almonds and a banana

Sunday

  • Breakfast: Greek yogurt, berries, sprinkle of oats
  • Lunch: turkey and cheese wraps, leftover veggies on the side
  • Dinner: sheet pan pizza. Stretch one pound of store-bought dough on an oiled pan. Top with marinara, mozzarella, sliced sausage, peppers and onion. Bake 18 to 22 minutes. Serve with a tomato and cucumber salad. Buy two balls of dough if your crew eats like mine.
  • Snack: apple and string cheese

The idea is simple. Half the plate vegetables, a solid portion of protein, and a starch you can see. If you want to calibrate portions, Portion Sizes Without a Scale and a Week to Practice On will help. And The Plate That Works for Most Adults, and a Week of It lays out the basic template.

Rough cost

Plan on roughly $110 to $150 for the week for a family of four with a lunch portion extra. Prices swing by region and store, and this is an estimate, not a quote. Most of the money is in the chicken, pork, salmon and turkey. To trim it, swap the pork chops for a second chicken night, or use frozen salmon. Frozen broccoli and green beans also work fine in a hot oven.

Sunday prep: about 75 minutes

  1. Egg bake (25 minutes, mostly hands-off). Whisk 12 eggs with a splash of milk, chopped spinach, one diced pepper and a cup of cheddar. Pour onto a parchment-lined, rimmed sheet pan or into a 9x13 dish. Bake at 375°F until set, about 20 to 25 minutes. Cool, cut into squares, and refrigerate.
  2. Rub the thighs. Mix the spice rub, coat the chicken, and bag it for Tuesday.
  3. Roll the meatballs. Form them on a plate, cover, and refrigerate for Wednesday. Wash your hands, then wash them again.
  4. Cut the hard vegetables. Sweet potatoes, carrots and onions go in containers with a damp paper towel. Slice peppers for Wednesday, Friday and Sunday.
  5. Mix the rubs. Pork and fajita spices go in small jars so Thursday and Friday take thirty seconds.
  6. Portion snacks. Bag the almonds, crackers and baby carrots.

Move the salmon from freezer to fridge Friday night if you bought it frozen.

Keep cleanup honest

You cooked. Somebody else clears the table and washes the pan. In my house that's the kids, in rotation, and it takes five minutes. Dinner's a good place to teach a kid that the work isn't finished until the kitchen's better than you found it. Phones go in a basket. The pan can wait until after you've talked.

A word on health

This is general education. It isn't individual medical or nutrition advice. If you have diabetes, heart disease or kidney disease, are pregnant, have a history of disordered eating, or are on a medical diet, check with your doctor or a registered dietitian before you change how you eat.

Swapping things in

Bored by week three? Our sister site delicious.com has thousands more recipes. Pick any of its roasted-chicken or fish dishes that fit a 425°F pan and drop them into a night. If you like cooking ahead, Two Hours On Sunday That Covers Every Dinner This Week is the other half of this approach.

Run the plan once. By Thursday you'll know where your oven runs hot and which kid will eat the zucchini. That's when the week starts working for you.
